Ingredients
1 cup cottage cheese
1 cup flat-leaf parsley leaves
1/2 cup mint leaves
1/4 cup dill sprigs
2 scallions, green and light green parts, roughly chopped
2 garlic cloves
2 tablespoons extra-virgin olive oil, plus more as needed
Lemon juice, to taste
Kosher salt, to taste
Freshly ground black pepper, to taste
Directions
- In a blender or food processor, combine the cottage cheese, herbs, scallion, and garlic. Blend until very smooth. Stream in the oil.
- Season with salt and pepper, to taste, and adjust the consistency with olive oil, if needed.
